It's a interesting idea. How to hold people accountable is going to be the hard part. I've got some pickups laying around and in a couple of guitars that I'd like to change out. But after getting burned on eBay it makes me skittish. Also do you agree to swap back if the other person isn't happy. I'm somewhat broke right now but I would do some trading if we can figure this out. Also we could do this with pedals!

There is always going to be an element of uncertainty an requisite trust, but we can certainly take precautions. Requiring home pictures of said pickups or pedals and/or sound clips is one step, though certainly not foolproof. Trading should probably be limited to people that have stuck around the forum for at least a little while, too. If you really want confirmation, setting up a time to Skype each other could provide some pretty good accountability.
